Enhancing hygiene and safety

In modern meat processing, maintaining stringent hygiene standards is essential to ensure food safety and extend shelf life. Among the technologies employed to reduce microbial contamination on carcasses, ozone (O₃) has gained attention for its strong oxidizing properties and effectiveness as a disinfectant. Used either in gaseous or aqueous form, ozone treatment offers a chemical-free, residue-free alternative to traditional sanitizers such as chlorine.

In slaughterhouses, ozone can be applied:

  • As ozonated water for surface rinsing or spraying
  • In its gaseous form within enclosed chambers or tunnels

Once applied, ozone rapidly decomposes back into oxygen, leaving no harmful residues—making it particularly appealing for food applications.

Applications in slaughterhouses

1. Carcass rinsing

Ozonated water is sprayed directly onto carcasses to reduce microbial load. This is often done after evisceration and prior to chilling. It helps remove pathogens like E. coli, Salmonella, and Listeria monocytogenes.

2. Airborne ozone in chill rooms

Gaseous ozone may be introduced into chill rooms or storage areas to reduce airborne contamination and inhibit microbial growth on carcass surfaces during storage.

3. Sanitizing equipment and work surfaces

Although not directly related to carcass treatment, ozone is also used to sanitize tools, conveyor belts, cutting surfaces, and other equipment, indirectly reducing the risk of carcass contamination.

  • Broad-spectrum antimicrobial action: Effective against a wide range of pathogens.
  • Residue-free: Ozone breaks down into oxygen, unlike chlorine which can leave harmful by-products.
  • Environmentally friendly: Reduces the need for chemical sanitizers.

    Efficacy Studies

    Several studies have demonstrated the effectiveness of ozone in reducing microbial contamination on meat carcasses:

    • A study published in Meat Science found that ozonated water sprays reduced surface E. coli and Salmonella counts on beef carcasses by up to 2 log CFU/cm².
    • Research on pork and poultry showed significant reductions in Campylobacter and Listeria after ozone treatment.
    • Compared to lactic acid or hot water rinses, ozone offers similar efficacy with the added benefit of no chemical residues.

    Ozone treatment of carcasses in slaughterhouses presents a promising strategy to enhance food safety and hygiene. While it is not a silver bullet and must be integrated into a comprehensive HACCP (Hazard Analysis Critical Control Point) program, its unique properties make it a valuable tool in the meat processing industry.
