Ozonated water for Aflatoxin

Using ozone for Aflatoxin reduction

Aflatoxins are toxic compounds produced by certain molds, particularly Aspergillus flavus and Aspergillus parasiticus. They commonly contaminate grains, nuts, spices, and other agricultural products, posing serious health risks. One effective way to reduce aflatoxin contamination is through ozonated water treatment with an ozone generator.

How ozonated water works

Ozonated water is created by dissolving ozone gas (O₃) into water. Ozone is a strong oxidizing agent that breaks down harmful contaminants, including aflatoxins, through oxidation. When food products are washed or soaked in ozonated water, several beneficial effects occur:

  1. Aflatoxin degradation – Ozone reacts with aflatoxins, breaking down their toxic structure into non-toxic byproducts. This helps reduce contamination levels in food products.
  2. Mold and bacteria inactivation – Ozonated water kills Aspergillus molds and other microorganisms, preventing further aflatoxin production.
  3. No harmful residues – Unlike chemical treatments, ozone decomposes into oxygen, leaving no harmful residues in the food or environment.
  4. Improved food safety – By reducing both aflatoxins and microbial contamination, ozonated water enhances the safety and shelf life of food products.

Applications in commercial processing

  • Washing systems: Ozonated water is sprayed or circulated over food products to remove surface contamination.
  • Soaking treatment: Products are immersed in ozonated water for a set duration to allow deeper penetration and detoxification.
  • Processing line integration: Ozone treatment can be easily integrated into existing washing and sanitization processes in food processing plants.

Challenges and considerations

  • Ozone stability: Ozone has a short half-life and needs to be continuously generated for effective treatment.
  • Concentration and contact time: The effectiveness depends on the right balance of ozone concentration and exposure time.
  • Material compatibility: Some materials in processing equipment may degrade with prolonged ozone exposure.

Ozonated water is a powerful, eco-friendly solution for reducing aflatoxins in food products. Its ability to degrade toxins, eliminate molds, and leave no chemical residues makes it an attractive choice for commercial food safety applications.
